Yet another winner from Budget Bytes 🙂 I gotta tell ya, she never fails!
Five things I love: natural peanut butter, oatmeal, chocolate, coconut, breakfast and health good…okay that’s six…but this recipe had not five but SIX things I love so I just HAD to make it! And man was it worth it! I loved it, Evan loved it, my brother loved it and his girlfriend loved it. It’s a keeper!

What You Need:
- 3-4 medium ripe bananas
- 2 eggs
- 2 Tbsp honey (or whatever sweetener you prefer to use…just use equivalent measurements)
- ½ tsp vanilla
- 1 tsp baking powder
- ¼ cup natural peanut butter
- 2 cups milk
- ¼ tsp salt
- 5 cups old fashioned rolled oats
- ⅓ cup dark chocolate chips
- ⅓ cup shredded coconut
Preheat the oven to 375 degrees. Mash the bananas with a fork until they are your desired consistency. Start with just three bananas and add another if needed to make 1.5 cups.
Add the mashed bananas to a large bowl. Add the peanut butter, eggs, brown sugar, vanilla, baking powder, and salt to the bowl. Whisk these ingredients together until smooth. Add the milk and whisk again.
Add the dry oats, chocolate chips, and shredded coconut to the bowl. Stir everything together until evenly combined. Lightly coat the inside of an 8×8 inch casserole dish with coconut oil. Pour the oat mixture into the casserole dish and bake for 45 minutes in the preheated oven.
This usually lasts me and Evan at least 3 days. It’s the perfect breakfast to make if you are usually rushed in the morning because you can just “grab and go”! Or if you have more time in the morning, you could always take a few spoonfuls, break it up in a bowl with milk and eat it like cereal. It could even be a nice snack to hold you over until the next meal. I have even fried up some left overs with coconut oil to give it a nice crunch and eaten it in a bowl with milk like cereal. Basically, whatever floats your boat 🙂
So here’s the deal. If you love natural peanut butter, if you love oatmeal, if you love chocolate, if you love coconut, if you love breakfast, if you love healthy food, if you love REAL food, why would you NOT make this. It’s a beautiful thing. Go make it. Try not to eat the whole thing…I bet you can’t have just one bite…
